before you cook any of my recipes please let me tell you something important. i am the queen of bullsh*t cooking. i throw together food like other people fold laundry. however you should not shy away and think you can't cook from such a loosey goosey recipe. yes you can!!! i do and people line up at my door waiting to get invited in for dinner. i am the other mother, the one that your teenager comes home and compares you to. why can't you cook like margie? roll with me on this guys. i will teach you how to wow with the chow.
so let's get ready and make some goat cheese stuff!!
i know it sounds awful but that's what the kids call it. it is easy as pie, delicious, and nothing like pie.
all you need: olive oil, spicy oil, 2 cloves garlic, some herbs, a little this a little that, rosemary, basil, maybe oregano, chili peppers, peppercorns, goat cheese.
throw it all into a bowl, preferably shaped like the goat cheese, but not so necessary. any bowl will do.
one teaspoon of peppercorns thrown in with enough spicy oil and olive oil to cover the goat cheese, add two tablespoons chopped herbs, then cut the goat cheese into four slices
throw in the two garlic cloves, sliced or chopped but not crushed. i have this fabulous garlic matchstick press which a. brought home from a trip to europe.

stick on the lid, and let it sit room temperature for an hour or two before serving.
serve with fresh french stick/baguette or in case of emergency use the stale baguette that you have sliced thin and oven toasted at 350 degrees until crispy.
yum. everyone loves it.
sometimes i don't even tell the folks that it is goat cheese, i just stick it on the table and they think it is cream cheese, and who doesn't like cream cheese.
